Are funeral potatoes a family favorite In your home? This was a common dish people would make and take to a funeral, then quickly became a household favorite and transferred to a side dish.
I love this dish and due to dietary restrictions could longer eat this. After grieving them, I decided to make a Keto version. I must admit I was skeptical of making a dish i would enjoy. I was wonderfully surprised at how they turned out! This will be a family dish on a cold winter night.

Cheesy Rice Cauliflower Bake
My Keto take on the traditional funeral potato recipe. Enjoy this comforting, cheesy dish with no carb overload.
Add the bacon grease to a pan, heat up the pan until grease is melted. Add the riced cauliflower and minced garlic to the pan. Cook over medium heat and stir frequently. Cook until a little browned.
In a sauce pan, add the heavy whipping cream and sour cream. Stir with a whisk until thickening. Slowly add the shredded cheese. Stir until thickened. Then remove from heat.
Crush the bag of pork rinds in a deep bowl. Add the spices. I really like the chili peppers flakes in this recipe, so I add them liberally. Feel free to add the spices you like. Mix the softened butter into the crushed rinds with your hands.
Add the riced cauliflower into a round baking dish then pour the cheese sauce over the cauliflower. Crumble the pork rind mixture on top of the cheesy riced-cauliflower bake.
Cook in the oven for 25 minutes at 350 degrees.
Allow to cool for a few minutes before eating.
