  1. In a large microwave mixing bowl, add 2 cups of mozzarella cheese and 3 ounces of cream cheese. Place mixture in the microwave for 60 seconds. Remove and stir. Return to the microwave for an additional 30 seconds. Remove and stir.
  2. Add to the mixture: 1/2 cup of coconut flour, 1 tsp vanilla, xanthum gum, 1/4 cup of monk fruit sweetener and 2 eggs. Mix well. If you need too, knead with your hands. Add additional 1/2 cup of mozzarella cheese, then microwave for 30 seconds. Remove and stir well. Then wrap the dough in plastic wrap and place in the refrigerator for 30 to 40 minutes.
  3. In the meantime, you can make the cinnamon mixture. In a small bowl combine, the golden monk fruit, cinnamon and melted butter.
  4. When the dough is ready, pull it out of the refrigerator and place onto parchment paper. Place parchment paper on top of the dough as well, it will make it easier to roll out. Roll the dough into a square. Then brush the cinnamon mixture on.
  5. Then roll the dough, carefully and evenly. If the dough starts to split- wet your fingertips and pinch it back together. Then cut into 9 pieces. Generously butter the baking dish.
  6. Now you are ready to add the rolls to your oven safe baking dish. Bake for 25 to 30 minutes at 375 degrees.
  7. While the rolls are baking, time to make the frosting! Combine the remaining cream cheese, butter, lemon juice, vanilla and the Powdered Monk Fruit. Mix until well blended
  8. When cinnamon rolls are done, remove them and let them cool for approximately 10 minutes before frosting. Enjoy!!!
  9. You don't have to frost the cinnamon rolls.... But I like to live on the edge 🙂
